Just finally figured it out! The trick was using the correct node type. Should have asked sooner.
iot_maker: I've been using this for two years and it's been pretty solid. The automations work well if you understand correctly.

Quick note: Matter support no longer works in the latest update. Use Zigbee2MQTT instead.
